The Philosophy

The alchemy of time, ember and grain.

Founded by Chef Patron Julian Mercer, Ember & Grain was born from a singular culinary conviction: the greatest flavors in gastronomy emerge when human intuition honors the elemental forces of natural wood fire and heritage cereal grains.

We avoid industrial kitchen short-cuts. Every cut of dry-aged beef, whole Atlantic black cod, and wild-foraged root vegetable is kissed by the white oak embers of our custom hearth. Our sourdough starter has been nurtured for eight years, fed exclusively with organic stone-ground spelt and einkorn from regenerative Hudson Valley mills.

“Fire is not merely a cooking method; it is an active ingredient with its own memory, aroma, and soul.”

— Julian Mercer, Chef Patron
